Clean Sweets: Coconut, Pineapple & Mango Popsicles

SONY DSCSummer is here and the weather is hot, so we have popsicles on our mind!  Everyday or maybe a couple times a day, I get asked “can we have a popsicle” by our oldest and the baby seems to understand very clearly because she is also there waiting.  I agree, it is the most refreshing thing to eat in the summer heat.  Instead of buying them from the store with all the extra added sugar, these are the perfect clean sweets that you and your kids will love…mine have already tasted several of them :).  These have only four ingredients are can be varied with your favorite fruit; light coconut milk, fresh or frozen fruit and honey…sounds simple to me and it tastes light you should be on the beach enjoying this as a cocktail. 

SONY DSCDon’t be scared off if you don’t have any popsicle molds, I made these in the mini dixie cups and then added the stick before freezing.  If you are feeling ambitious and think you might make them more than once, here are some of the molds I love… Norpro Popsicle Mold, Zoku Classical Popsicle Mold, and  Sipper Ice Pop Molds (perfect for kids).

Coconut Pineapple Mango Popsicles

Ingredients
  1. 1 can light coconut Milk
  2. 1 cup frozen pineapple (or your fruit of choice)
  3. 1 cup frozen mango
  4. 2 Tbsp honey
Instructions
  1. Blend all ingredient in a blender or food processor until smooth
  2. Pour into molds and freeze
  3. Enjoy!

Out with the old…In with the Yellow

unnamedIf you are like me, you have been in clean out mode for the New Year and it is the best feeling!  I get this amazing energy when I start cleaning out the closets, drawers and cabinets, but after my clean out, my next favorite thing to do is to refresh some of my must haves.  This year, I am excited to vamp up my kitchen with some fresh yellow items that will inspire me to cook and spend more time in the kitchen.

15 days away….are you ready to decorate your Thanksgiving table?  In our family we rotate homes for the holidays and this year, I get to host everyone for Thanksgiving and I am so excited about it.  Not only is Thanksgiving my favorite holiday, I love all the decorations that go along with it.  The menu is really important to me, but as important is how my table is going to look because we tend to spend the entire day around the table.  The “I’m Thankful For…” placemat is one of my favorites and it is a DIY project, so you can design it to coordinate with your table design.  For the last 7-8 years we have had a tradition of “I’m Thankful For…” round table with the family, we all have so much to be thankful for and this is our way to let the family share our blessings with each other.   This placemat will be such a great addition to our table so that we can write our thoughts down before sharing them with everyone.   Here are some of my other favorites for this year….what will your Thanksgiving table look like?

If  I could plan any party or sit at a restaurant and just eat cheese and drink wine, I would!  The simplicity of cheese is truly an amazing thing and for me it could be an entire meal or the base of a fantastic party.  Why not get a group of people together and let everyone bring their favorite cheese and bottle of wine and I bet you will see everyones personality through the cheese they bring.  All you will need are some great platters, cool spreaders, cheese label, these really creative cheese coasters and your favorite local cheese shop.  Pour yourself a big glass of wine and get started!
